THE KNIFE GUIDE

One great knife. Honestly chosen.

Twenty names on the wall come down to three decisions — the job it does, the steel it’s forged from, the feel in your hand. All three, on one page.

Nobody needs twenty knives. You need the right three — and the confidence to know why. Every knife we forge answers three questions: what job is it shaped for, which steel is it forged from, and how should it feel in your hand. Answer those, and the whole wall reads in a minute.

DECISION ONE

The job

Twelve shapes cover everything a kitchen does — here's what each one is actually for.

THE HONEST TAKE

Buy for the jobs you actually cook — not to fill a block. One great chef's knife outworks a drawer of average ones, and the LIFETIME GUARANTEE means you can build your set one knife at a time.

DECISION TWO

The steel

Every blade we forge is one of two steels. Both ice-hardened, twice-sharpened, set at 15–20°. What differs is how they cut — and how they live.

FORHED IN CHUO-KU, CHIBA --- KNIFE-MAKING SINCE 1943

Japanese 420J2

53 HRC

The thinner blade. Less wedge to drag through the food, so it cuts finer — the steel of precision work, kept light by one-piece hollow handles that balance the knife in the middle of your hand.

THE MOST IMPORTANT ADVANTAGES

  • Thinner blade — less wedge, finer cuts, faster and more agile
  • 53 Rockwell — softer steel takes a finer edge and hones razor-sharp easily; sharpen more often
  • Lighter in the hand — seamless steel handles, weighted mid-knife

BEST FOR

Precision — vegetables, fish, fine slicing, fast agile prep.

THE RANGES

FORGED IN DILLENBURG, GERMANY — BLADE STEEL SINCE 1910

German 1.4116

55 HRC

The thicker blade. More wedge powers through tougher meats and vegetables — the steel of hard daily work, carried by full-tang, triple-riveted handles built for force and leverage.

THE MOST IMPORTANT ADVANTAGES

  • Thicker blade — powers through tough meats and hard vegetables
  • 55 Rockwell — harder steel holds its edge longer; a little more work to sharpen
  • Heavier in the hand — full tang runs through the handle for leverage

BEST FOR

Precision — vegetables, fish, fine slicing, fast agile prep.

DECISION THREE

The feel

Same steel, different hands. The handle decides how the knife carries its weight — and which range is yours.

One-piece stainless the most durable, most sanitary handle made — seamless steel, balanced mid-knife. The light, agile choice.

01

The blunt knife is the dangerous one

The duller the blade, the more pressure you need — and the more likely it slips. Regular sharpening makes every cut easier and safer.

02

Wood or poly boards only

Glass, ceramic, stone and plates kill an edge faster than any amount of cutting. Cut straight through — never twist the blade.

03

Hand wash, towel dry

The dishwasher ruins blade and handle. Rinse straight after acidic foods — lemon and tomato stain a resting blade — and never store damp.

How should I care for my knives?

We recommend handwashing your knives with mild soap and warm water, then drying  immediately. Avoid dishwashers as the high heat and abrasive detergents may dull your blades and handle and increase risk of rust and corrosion.  Regular honing keeps your blade sharp—professional sharpening may be needed only once a year with proper care.
