THE COOKWARE GUIDE
Cookware materials, honestly explained.
Stainless steel, aluminum and cast iron — and the three coatings that go on top. Every material we make, what each one is best for, and how to choose yours, on one page.
A cookware wall that looks like a dozen choices is really three. Every pan we make starts as one of three bodies — 18/10 stainless steel, aluminum, or cast iron. The material decides how a pan heats: how fast, how evenly, how long it holds. The coating on top decides how it releases — and what chemistry you live with. Read those two choices and you can read our whole range in a minute.
18/10 Stainless Steel
No coating, nothing to wear off. Best for searing, browning and pan sauces.
Aluminum
Fast, even, light — the body behind every non-stick pan we make. Best for everyday cooking.
Anodized Aluminum
Aluminum twice as hard as steel, with non-stick on top. Best for high-heat weeknights.
COOKWARE MADE OF
18/10 Stainless Steel
THE MOST IMPORTANT ADVANTAGES
- No coating — chemical-free by construction, PTFE- and PFOA-free by definition
- Takes metal utensils, the dishwasher and 428°F (220°C) ovens without complaint
- Sears and browns like nothing coated can — and deglazes into pan sauces
- The buy-once material: nothing to scratch, nothing to retire
BEST FOR
Searing, browning, deglazing into pan sauces, stovetop-to-oven cooking.
Stainless Steel
COOKWARE MADE OF
Aluminum
THE MOST IMPORTANT ADVANTAGES
- Fast, even heat distribution — no patient preheat required
- Lightweight: the pan you actually reach for every day
- Carries the non-stick coatings — classic PTFE-based or GREEN STONE™ ceramic
- Induction-ready bases across every current range
BEST FOR
Everyday oil-free frying — eggs, fish, pancakes — and the fastest cleanup in the kitchen.
Aluminum
COOKWARE MADE OF
Hard-Anodized Aluminum
THE MOST IMPORTANT ADVANTAGES
- Body twice as hard as stainless steel — shrugs off warping and heavy daily use
- TRI-TEC triple-layer non-stick — PFOA-, lead- & cadmium-free, oil-free release
- iD3® frypans diamond-reinforced to 700,000 abrasion cycles (range 120,000)
- Oven-safe to 428°F (220°C) on iD3®; full-induction bases on every piece
BEST FOR
High-heat weeknights — searing, sautéing and frying with non-stick release and easy cleanup.
Hard-Anodized Aluminum
COOKWARE MADE OF
Cast Iron
THE MOST IMPORTANT ADVANTAGES
- Unmatched heat retention — medium-low does what high does in aluminum
- Double-layer enamel: no seasoning, no rust, nothing to baby
- Self-basting lid keeps braises moist without lifting the lid
- Stovetop-to-oven-to-table at 428°F (220°C)
BEST FOR
Slow cooking, braising, roasting, bread, hearty one-pot meals.
LE CONNOISSEUR™
6.6 Qt. Round French Oven
The cast iron range is one piece deep — and it’s the piece. OneFrench oven covers the braise, the roast, the bread and the Sundaypot; the enamel means it’s ready out of the box and stays that wayfor life.
Cookware and coatings
The three coatings, honestly explained.
Whatever the body, it's the coating that decides how a pan releases — and what chemistry you live with. We make three. Every one of them is PFOA-, lead- and cadmium-free; here's where they differ.
COATING 01
Classic Non-Stick
The PTFE-based standard that made oil-free breakfast possible — stone-effect triple-layer across STONE™ and STONE™ X², reinforced to 700,000 scratch cycles on GRANITE™, and a European ceramic-fusion triple layer on IRONROC™.
Honest note: PFOA-free is not PTFE-free. Wood or silicone utensils; oven-safe 302–428°F by range.
COATING 02 · CLEAN COOKING
Classic Non-Stick
GREEN STONE™ 7th-generation ceramic, reinforced with stone particles, is made without Forever Chemicals — no PTFE, PFOA, lead or cadmium. The only zero-PTFE coating we make, and it’s still metal-utensil safe and oven-ready to 428°F (220°C).
The trade: ceramic likes medium heat and real oil — never aerosol sprays. Treat it kindly and it rewards you for years.
COATING 03
Enamel
Double-layer vitreous enamel over LE CONNOISSEUR™ cast iron. Enamel is glass — nothing to leach, nothing to wear off — and it replaces seasoning entirely. That’s the whole difference between enameled and traditional cast iron.
Soft utensils and a warm soak are all the care it asks; the one rule is no thermal shock.
01
Stainless - The Water Drop Test
Heat the dry pan on medium until a drop of water beads and dances. That’s the moment oil goes in — and almost nothing sticks after it.
02
Non Stick - Never Preheat Empty
An empty non-stick pan on high heat is the one thing that pushes a coating past its comfort zone. Oil or food in first, then heat.
03
Cast Iron - No Thermal Shock
Fridge to hot oven, or hot pot to cold water, is the one thing enamel dislikes. Let temperature changes happen gradually.

We recommend handwashing your knives with mild soap and warm water, then drying immediately. Avoid dishwashers as the high heat and abrasive detergents may dull your blades and handle and increase risk of rust and corrosion. Regular honing keeps your blade sharp—professional sharpening may be needed only once a year with proper care.
